Snow Crab Cakes

Ingredients:
1 lb broken snow crab legs
1 cup fresh bread crumbs
1/2 cup minced red onion
1/4 cup minced celery
1/4 cup minced red pepper
1/4 cup chopped chives
2 ea egg yolks
2 tbsp butter
1/8 tsp hot sauce
1 tsp worcestshire
Salt & Pepper to taste
Directions
1. Sweat vegetables in butter until tender. (cool)
2. Combine crab, crumbs, vegetables, egg yolks and seasonings.
3. Mould in to desired shapes.
4. Dredge in seasoned flour, egg wash and dehydrated potato flakes.
5. Deep fry until golden brown.
Notes:
